Thanks all!  I will have another go, but this time i will try sourdough ones.  Can't give up just yet.

So what advice would you give to those of us who make flat crispy bagels...? Make the dough stiffer seems to be the key thing, is that right?  I did a bit more reading yesterday and Claudia Roden recommends putting an egg in the mix... anyone tried that and can say what the results were like?  I don't mind having several goes till I get something I like, just don't want to repeat mistakes if I can avoid them  ;D

I made some more bagels using Paul's sourdough recipe and made the dough really really stiff and it worked beautifully even though I couldn't do the water test as the one I tried went all out of shape immediately.

 Feel happier and more mellow about bagels now  ;D


and I seem to be able to post again - hooray!

Those look awesome, Joanna!!!! I also made Paul's sourdough bagels a couple days ago, and they didn't turn out flat, either. But taste-wise they couldn't keep up with the BBA bagels.

They tasted good Abby, not too sweet, a hint of malt on the crust, which was thin with a little bite. I haven't made your BBA ones, I've got the book, just don't bake from it!  I bought loads of baking books when I started out, got so confused, so stuck to just The HandMade Loaf, Bread and a little publication called The Guardian Guide to Baking which was included with my newspaper a few years back, mostly written by Dan Lepard - that was my starting point - a recipe in there beguilingly called "The Easiest Loaf".  I think The GGtoB recipes and so on can be found here still.

I have never heard of a milk bread before . . . I'm intrigued! Will check out that link now . . . . .

Following a little discussion on twitter this evening re bagels have to say that Paul's sourdough bagels worked much better for us than these did, had forgotten quite how awful these first ones were  rofl I'm looking for those nice links to the videos of the bagel making and can I find them on here?  Where have they gone?
