Cathy's Spelt Bread with Multigrain Soaker

I wanted to make this bread in February, but I ran out of month. I made it this past weekend instead.  I substituted white spelt flour for the bread flour and whole grain spelt for the whole wheat flour.  I used cracked wheat (bulgur), cornmeal, steel-cut oats and flax seeds for the multigrain soaker.  I also added some spelt flakes to the top of the loaf before baking.  It's really good.

I decided to bake the loaves in loaf pans rather than freeform.  It makes good sandwich bread.
