This apple bread helps the winter doldrums by bringing back warm memories from my youth. I grew up on an apple orchard/farm in Wisconsin. Countless recipes with apples were tried to find the best apple for the right cooked or baked item; most were for desserts and not many for breads.
Hamelman's Normandy Apple bread is one my favorites so far -- I love apples!
My bread didn't have the cider (only apple juice) and my apple selection, well, to me it was more of an apple for eating than baking. I explain on my post at www.waitingforgooddough.blogspot.com
