Sometimes Dan Lepard writes in the British Baking press, here is a really interesting article about flours, aimed at the professional baker, but hey, we are almost professional  rofl and I thought given that we all love baguettes, this might be of interest, especially the last bit with another variation on how to make baguettes using a 3/4 sponge. I thought Lutz in particular might be interested to see this and try it out and I'd love to know how it goes


I don't know if Jeffrey Hamelman writes anywhere in a similar way. Does anyone have any links? I have only ever read our 'Bread', and it would be interesting to read new material by him  :)

I never tried to bake baguettes with a sponge. My test series is with poolish and levain. But I'll bake Dan Lepard's receipt in a few weeks and I'll report on the result :).
