Bnom's Vermont SD with whole wheat

Oh my, this was an uber tasty bread!  Will definitely make again and again. I upped the hydration and did a long overnight retardation.  It's pronounced sour flavor was balanced by the nutty wheat tones. Good open crumb with nice gelatinization.

Glad to see it turned out well for you! You'll find it improves over the next couple of days too (if it survives that long, that is).
