Another Home column conversion glitch.

A member at TFL, RobynNZ, pointed out that there was a possible glitch in the Home column for this recipe. She calculated the amount to be ~1.25 to 1.5 tsp.

(I'm starting to suspect whoever did the conversions from Hamelman's production-sized quantities was not paying enough attention)

I haven't made these yet but I decided to convert the Hamelman Metric amounts to the home amounts where one makes 72 breadsticks (6 doz) and the home version makes 24 (2 doz) which is 1/3 the larger amount. Again, this recipe is on page 256.

Assuming the ratio of 1:.33 holds for fresh to IDY (see conversion on page 388), he calls for 46g of fresh in the Metric. Dividing this in 3 for the Home version gives us 15.3g (.5 oz) fresh abd dividing that again by 3 for the fresh-to-IDY conversion yields 5g IDY. (.17 oz) which is 1.53 teaspoon.

So the result is that it's about 25% less than the 2 tsp in the book.

UPDATE:

The Hamelman Errata notes that the amount here should read .18 oz, instant dry (1 3/4 tsp)
