Hot Cross Buns, paste ingredients, pg 267

Somewhere between 5th and 8th printings, the editors of the book changed the Hot Cross Bun paste ingredient list.

The old ingredients were as follows:


These were changed to:


Either pastes should work but obviously Mr Hamelman prefers the second updated version.

I don't have the 2nd version in my book (5th printing) so if someone does have it, can you please write out the ingredients and home measurements here?

So, here are the ingredients and home measurements:
- 4 oz melted butter
- 4 oz sugar
- 3 oz milk
- 1 tblsp vanilla
- grated peel of 1 lemon
- 1/2 egg (that must be a typo, though, because the recipe for 144 buns calls for 1/2 egg, too)
- 8 oz sifted flour
You melt the butter with the sugar, add everything but the flour + mix well, and then add the flour.

That's great Andrea, my numbers run from 10 - 2 does that mean I have the second edition ?
Sounds like a lot of paste though for the buns. Did you have lots left over?

I had LOTS of paste leftover! So, a half recipe is more than enough!!!!! Zeb, according to Abby (who learned that from her dad) you have the 2nd printing (not edition) then...

It's all very educational this forum, I'm learning about print runs now and getting tuition from everyone on how to do all the bits and pieces. But my brain just seized, is Abby his/her own father, is that one of those riddles?  I mean I know I am my dog, but being your own father... no I've missed something somewhere  :laugh:

Zeb, NOOOOOOOOOOOOOOOOOO... of course she is not her own dad  rofl... I meant to say that Abby got this information from her dad. Sorry, Abby!!!! Going to change that in my reply - I'm not a native speaker, so I hope you'll forgive me!

 :laugh: Hee hee hee . . . you all are so funny!! (BTW, I'm going to check in with my dad about all of the stuff about the protocol for changes in printing . . . he's been in the industry for 40 years or something so maybe he can give us some insights)

I made half of the paste recipe, and 24 buns (2 x the bun recipe) and still had enough paste to probably do another dozen. So, 1/4 of the paste recipe would probably be plenty (although that means you have to divide 1/2 an egg into 4 ...... don't quite know how to do that!!)

A little egg for the paste plus a scrambled egg sandwich?
I recently did something that required 1.5 eggs or some such so the dogs got a little scrambled egg with dinner.
