So I have been meaning to do this "June" challenge for a while now. I cooked the wheat berries for 45 minutes the night before and then soaked them in white wine overnight.
I did my best to follow Dan's recipe. The dough was very sticky and I was probably a little too generous flouring my work surface.
I chose the melted butter option and worked in the salt.
I confess that I have never made baguettes or batons before and didn't think this was the best time to experiment so I opted for my trusty banneton which was a little undersized for the amount of dough!
I could have been a little more creative than the single slash and the resultant loaf cracked a little.
But it tasted great - my wife picked up the honey notes immediately. Great texture and I love the wheat grains - i really should use them more in my everyday loaves.
A success! Now to try the similar beer bread in the July challenge....
