Ray's Onion and Bay loaf

This is a great loaf and my favourite from the September breads. Like Mal, I am not a great fan of white bread so if I am going to make it I want it to be special. And this is special! I made it last Sunday so had the time to follow the recipe more closely than usual.

I added a bit more onion because I had chopped it up already. I had some fresh bay leaves and organic milk but I used a little dried yeast instead of fresh.

The steeped onions smelled lovely!

When you bring the mixture together it feels a little ragged...

... but becomes smooth with folding and kneading.

I opted to prove in a basket

The dough looked great before going into the oven. I slashed it... The recipe doesn't seem to suggest this and I am unsure why that would be.

Its a great looking loaf.

The bread has soft moist crumb that stayed fresh for days and the taste is great especially with soups or couple with a mature cheddar.
