Re: Rosemary & Fresh Cheese Sticks Overview

...and in the UK, 'plain flour'. Protein content on the nutritional information panel should be less than 12g - typically it's around 11.5g. There's a good overview on Dan Lepard's website on the differences between plain (soft) and strong flours, including equivalent US/European flours, which tend ...

Baking weekend in North Wales, July 7th & 8th 2012

Not sure if this the right place to be posting this, but UK based forum members may be interested in this baking weekend taking place in North Wales in July. I had a great time at last year's event and will be going again this year. Some photos from last year. Anyone interested in attending the even...

Re: adding poolish / biga to recipe

You could try a poolish of 140g water (1g=1ml water) and 140g bread flour, 2-3pinches of yeast, left overnight. So when you mix your dough, you would leave out the water and only use 35g bread flour. You don't mention how much yeast is in the recipe, but you could probably reduce this by a gram or t...

Re: Geraint's Cherry, Fennel & Rye Loaf

Thanks Mal. After this experience, I bodged the seal with a couple of mini bulldog clips until I could get a proper replacement. Still wondering how to calibrate the oven thermometer though! Ray - True, but for me the problem was the cherry - one of the most disgusting medicines I had as a kid was c...

Geraint's Cherry, Fennel & Rye Loaf

I made this a couple of weeks ago, but have been a bit slow, sorry - mellow - about posting. http://farm6.staticflickr.com/5349/6905366122_dd529f7f6e.jpg I soaked the cooked rye grains (which I bought here ) and the dried cherries (from Waitrose ) in cherry brandy overnight. I keep a whole/dark rye ...

Re: Ray's white loaf with millet flakes

Great looking loaf Ray. Your crumb looks a lot softer than mine - what flour did you use? Which Doves Farm yeast are you using - the Quick (i.e. instant) or the Original (i.e. active dried)? The latter is the same as fresh yeast, but dehydrated. The instant is likely a different strain, with an addi...

Re: Naomi's Cherry, Fennel & Rye Loaf

Congratulations Naomi, both for being the first to post a bread and for a great looking loaf. It looks perfectly well risen from here, considering the amount of rye flour in there, not to mention the other additions. With 50% rye flour (100g as flour + 50g in the leaven) I would expect the dough to ...

Hi, I'm Geraint

I'm Geraint from Dinas Powys, a village near Cardiff, South Wales (UK). I run breadmaking classes at home and do a weekly bake (mostly sourdough) for family, friends and neighbours. I took part in the tail end of the original Mellow Bakers group (under user name 'sgratch'), although I rarely managed...
