Just finished my post, it's a bit rambly, detailing the trials and tribulations figuring out the yeast conversions, but I loved the brioche and I think I've got the hang of it now. I want to make chickens like Lien's next time, they are so cute! I have to say it really pays sometimes to follow the instructions exactly. Particularly the ones about chilling the water and the flour and the bowl.  The only thing I would add is to recommend always warming the brioche up before you dive in. It's so much better warm than cold!

Beautiful!  I agree the brioche is much better warm than cold.
