These were awesome. I just made them today and we really loved them. I made sure to make the intendations really wide and even scored the membranes so they wouldn't puff up, and everything worked out perfect. Do you guys think I could use the same dough for making bagels? I'm still on the hunt for the perfect bagel recipe... You can read about my bialys here.

Indeed, they came out great, you got the whole hole thing down very well.

I doubt these would make good bagels, they're not quite the right consistency. I would ask if you had checked out the sourdough bagels recipe on Yumarama, a slightly modified version of Mike Avery's but from the comments there (you posted one in April) it seems you did already. I didn't see anything about them on your blog; have you made them yet?

Yes, I made the sourdough bagels from your blog, but haven't posted... I just mentioned the result in a post about Karelian Water Rings which are very similar to bagels. Avery’s sourdough bagels weren’t flat, but tastewise not as good as the BBA bagels....

Avery’s sourdough bagels weren’t flat, but tastewise not as good as the BBA bagels....

Odd, I was decidedly of the reverse opinion...  :hmm:
I found the BBAs didn't hold up to Avery's at all. The looked nice and tasted OK, but the sourdoughs had so much more flavour (IMHO).
